Hello everyone :-) This weekends recipe is vegan mango curry noodles! I got inspired to make some curry noodles after I had spaghetti with curry sauce at a restaurant the other day. Later I found out that the curry sauce was in fact not vegan which thoroughly annoyed me, so I decided to make a vegan version for myself. Eggs in curry sauce as you'll find out, is completely unnecessary.
Before we get into the recipe, let me introduce you all to a company called Lifewinners! They very kindly sent me some products to try out, including the wholemeal quinoa noodles I'll be using in my recipe today. It's made of 3 simple ingredients: wholewheat flour, quinoa and filtered water. They have a whole range of noodles I'm dying to try out. Now on to the recipe. It's so easy but incredibly tasty. It's a sweet curry sauce reminiscent of Indian mango chutney, and it actually goes very well with the wholemeal quinoa noodles. There are 4 bundles of noodles in each package. I just used one for this recipe.
