Lifewinners + Mango Curry Noodles

Hello everyone :-) This weekends recipe is vegan mango curry noodles! I got inspired to make some curry noodles after I had spaghetti with curry sauce at a restaurant the other day. Later I found out that the curry sauce was in fact not vegan which thoroughly annoyed me, so I decided to make a vegan version for myself. Eggs in curry sauce as you'll find out, is completely unnecessary.
Before we get into the recipe, let me introduce you all to a company called Lifewinners! They very kindly sent me some products to try out, including the wholemeal quinoa noodles I'll be using in my recipe today. It's made of 3 simple ingredients: wholewheat flour, quinoa and filtered water. They have a whole range of noodles I'm dying to try out. They literally have so many kinds, see for yourself if you don't believe me!

If you visit a health food store in Singapore, you're likely to see some products around the store under the brand "Dr Gram". I myself have purchased this brand a couple of times but I never knew that the Dr Gram brand was actually created by Lifewinners Organic! Now on to the recipe. It's so easy but incredibly tasty. It's a sweet curry sauce reminiscent of Indian mango chutney, and it actually goes very well with the wholemeal quinoa noodles. There are 4 bundles of noodles in each package. I just used one for this recipe.
Mango Curry Noodles
Easy, low fat
Yields one serving
The Ingredients
2 tbsp diced onion
1/2 tsp minced ginger
1/2 tsp curry powder
1/4 tsp chili flakes (didn't have fresh chili!)
3/4 cup water
1 tbsp full fat coconut milk
1/2 a mango chopped
1 bundle of wholemeal quinoa noodles
To serve:
Some julienned red bell pepper
Steamed kale
How to
Step one- In a sauce pan, sauté onion, ginger and spices over medium heat for a minute or so. Add water, coconut milk, and mango. Simmer for 15 minutes or longer, stirring periodically, until the curry sauce thickens.Step two- Meanwhile, cook your noodles in boiling water. They take around 3 minutes to cook, which isn't very long so just check to make sure you don't over cook! Once the noodles are softened, drain them in a sieve.
Step three- Mix the curry and noodles together, serve with kale and red pepper and enjoy :-)
Note: The portion size isn't very big, I actually had this alongside some sweet potato. I recommend doubling or tripling the portion if you're a high carb vegan OR you have a big appetite!
