Pumpkin Cookie Dough Chocolate Waffle Sandwich
Yields 2 sandwiches

The Ingredients
Cookie dough: 
1/2 cup (well) mashed pumpkin (steam it first) 
2 tbsp Coconut Flour
1/4 tsp cinnamon
About 1 tbsp vegan chocolate chips (I use Enjoy Life. You can feel free to add more or fewer chips!) 

Waffle: 
1/2 cup wholewheat flour 
1/4 tsp baking powder
1/2 tsp cornstarch 
3/4 tbsp cocoa powder 
1/2 tbsp maple syrup 
1/2 cup water 

How to

Step one- Combine mashed pumpkin, coconut flour and cinnamon. Stir in the chocolate chips. If your pumpkin isn't particularly sweet you may want to add sweetener like a drizzle of maple syrup? Totally up to you. By the way the amount of coconut flour you need may vary since flour absorbency tends to differ between different brands. So don't add the flour in all at once :-)

Step two- Mix dry ingredients for the waffle together, and then stir in the wet ingredients. Again do not add in the water all at once. Add most of it in, and add the rest if the batter is looking a little too thick! Cook in your waffle iron. 

Step three- Cut the waffle up, assemble the sandwiches and eat!
