My Favourite Vegan Burger
Tuesday, September 06, 2016
Hey guys! I've been wanting to share the recipe for these black bean lentil burgers for a while now. These go great in pita pockets, on toasted burger buns, and you can even have them as a light snack with some salad. I didn't create this recipe but it is my favourite in terms of taste and texture so I really hope some of you guys will try it out. They're crisp on the outside and not too mushy on the inside!! They're also super healthy and easy to make :-)
Black Bean Lentil Burgers
Adapted from Jeff Novick
Yields 6 patties
The Ingredients
1.5 cup cooked lentils (I used canned ones)1.5 cup cooked black beans
1/2 cup cooked and cooled brown rice
1/2 cup instant dry oats
1/4 cup ketchup
1/4 cup diced onion
2 tsp smoked paprika
How to
1- Preheat oven to 200C. Mash all the ingredients together except onion until you're able to form the mixture into patties. The mixture should still be a little chunky. You can also use a food processor but be careful not to over process as the patties will lose their texture.2- Fold in the onion and form the mixture into 6 patties and place them on a prepared cookie sheet. Bake in the oven for around 30 minutes. Serve however you like but for the record, I think these taste really nice with some sweet onion jam and wholegrain mustard.
