Made these cute little orange flavoured donuts for Chinese New Year and I really like how they turned out. The pumpkin puree lends a nice orange colour to the end product, which is very appropriate for this time of year! Replace a few of those unhealthy Chinese New Year goodies with these healthier alternatives to balance out all the feasting ~
Low fat vegan orange cake donuts
Yields approx 20 mini donuts
The Ingredients
1/3 cup granulated sugar
1 cup all-purpose flour
1 tbsp corn starch
1/2 tsp baking powder
1/3 tsp Baking soda
1/2 cup unsweetened soy milk
1/4 cup freshly squeezed orange juice
2 tbsp pumpkin puree (I steamed pumpkin until very soft and mashed it well)
½ tsp vanilla extract
Zest from 1/2 large orange (1 tsp orange zest)
Melted dark chocolate to drizzle (30+ grams)
How to
1- Whisk together dry ingredients. Add in wet ingredients and combine.
2- Preheat oven to 180C. Pour into greased mini donut tins and bake for around 12 minutes or until a toothpick comes out clean.
3- Melt some dark chocolate in a microwave by microwaving for 30 seconds, stirring and repeating until all melted. Drizzle the chocolate over the donuts. Pop the donuts into the fridge to let the chocolate set.
