Easy matcha cupcakes

These cupcakes are so quick to prepare it literally only took me about 20 minutes to get them into the oven. Despite the minimal effort required, taste and texture are not compromised! This recipe yields fluffy, moist, green tea scented cupcakes that aren't too high in oil and sugar either :-) Everyone who's tried them loves them and I know you will too :D


Matcha cupcakes 
Yields around 6 cupcakes

The Ingredients
1 tbsp corn starch (aka corn flour to Americans)
1 cup all purpose flour
1/3 cup granulated sugar (for greener cupcakes you'll have to use white sugar)
Pinch of salt
1/2 tsp baking powder
1/3 tsp baking soda
1 tbsp organic matcha powder
3/4 cup soy milk
1/4 cup neutral flavored oil
1 tsp apple cider vinegar
3/4 tsp vanilla extract

How to
1- Preheat oven to 180C.
2- Whisk dry ingredients together.
3- Add in wet ingredients and whisk everything together just until a smooth batter is obtained. Over mixing results in gummy cupcakes ..... so don't do that.
4- Fill prepared cupcake liners and bake at 180C for 20min.
