Healthy Oreos

The title of this is pretty self explanatory. Healthy Vegan Oreos on the last day of Mid Years!

My dad picked me up from school and brought me over to bake king at Haig Road earlier and we got some circle cookie cutters to bake these! My Oreos are slightly bigger than the traditional unhealthy store bought processed kind, which in my opinion is a good thing. After all, the bigger the better haha. Okay just kidding imagine an Oreo the size of your head. That sound pretty good actually. Hahaha.


Most people love Oreos. I know I do! I wish I could have these cookies on hand so I can use them in Oreo recipes, like Oreo cupcakes, whenever I want. Alas, if I ever want to make a recipe with Oreos, I'll have to bake a batch of these first. Thankfully, these aren't too difficult! In fact they aren't difficult at all, and punching these out with a cookie cutter is a whole bunch of fun. I've never made healthy cookies that are rolled and cut out with cookie cutters before! A significant milestone in my cookie history. I've actually got a history filled with cookie fails so I'm glad these worked out!

In all honesty though, these do not taste like authentic Oreos. They're much less sweet and they're also more of a chewy cookie then a crunchy biscuit-like one. So for those people who go for chewy cookies, this one's for you. If you prefer a crisper cookie, you may consider baking them longer, although I can't guarantee how they'll turn out.


Healthy Oreos
Vegan, Dairy Free
Yields: About 7 sandwich cookies

The Ingredients
1/3 cup chopped dates 
1/2 cup + 1 tbsp almond milk (divided)
1/2 cup spelt or wholewheat pastry flour 
1/4 cup unsweetened cocoa powder 
1/6 tsp baking powder
1/2 tsp vanilla extract
2 tbsp coconut oil 

1/3 cup raw cashews soaked for 2h 
1/4 tsp vanilla extract

How to
Step one: Begin by pitting and chopping your dates. Place dates and 1/4 cup almond milk into a small food processor or blender and blend away. Try to chop the dates up as much as possible.
Step two: Mix your flour, cocoa powder and baking powder together in a medium sized bowl. Add in your date mixture, vanilla extract, and coconut oil. Add in remaining almond milk bit by bit and mix well to combine. Your flour may not be as absorbent as mine, and you don't want to get the dough too wet. You may need to use your hands towards the end. Form the dough into a ball and stick the entire thing into the fridge for 20 minutes. This makes it easier to work with.
Step three: Preheat your oven to 150 degrees c. Flatten the dough ball and roll it out to about 1/2 a cm thick. Cut out circles using a circular cookie cutter of a size similar to Oreos. 
Step four: Bake for 12 minutes. They get firmer as they cool, so let the cookies cool before eating. Meanwhile drain your soaked cashews, pop them in the blender with a tablespoon of the cashew water, and vanilla extract, and blend till a sticky cream forms. Sandwich some cashew cream between the cooled Oreos and serve.



P.S I know normal Oreos are vegan........... but these are so much better for you (:
