Chickpea cauliflower pumpkin curry

This curry is so ridiculously easy I didn't expect it to taste this great hehe. It's extremely healthy and packed with nutrients :D Adjust the cayenne pepper according to your taste buds and how spicy your curry powder is! 

Chickpea cauliflower pumpkin curry 

The Ingredients 
2 cloves garlic, finely chopped 
1/2 a medium onion, diced 
1 tbsp finely chopped ginger 
1 tbsp curry powder
Dash of cayenne pepper 
1 cup chopped Pumpkin 
1 cup canned chick pea, rinsed
1 cup chopped cauliflower 
1 tomato, chopped 
1/2 tbsp unrefined sugar 
1/2 cup soya milk (anything you prefer) 
1.5 cup water 
Handful of baby spinach 

How to
Step one- Sauté garlic, onion, ginger, curry powder, and cayenne pepper in a pot for 2-3min. Use a little water to prevent sticking.
Step two- Add in the remaining ingredients except baby spinach. Bring everything to a boil, then lower heat, cover and simmer for 20min+. 
Step three- Stir in baby spinach and allow it to wilt. Serve the curry with rice and enjoy!
