Caramel Apple Hand Pies

Upon request of quite a few of you guys on instagram, here's the recipe for refined sugar free vegan apple hand pies! My family loved them so much and even my brother liked it :') He usually doesn't like the things I make so you know these are good. I used left over store bought puff pastry dough for this, but you can also use homemade dough of course! I'd say the laziest and most convenient way would be to use pre-rolled puff pastry sheets :-) The maple syrup can be substituted with any liquid sweetener. If you're using a sweetened type of plant based milk, you can omit the maple syrup.

Caramel Apple Hand Pies


The Ingredients

1 apple (188g), diced
Zest from 1/2 a lemon
1/4 cup diced dates (60g)
1 tbsp ground flaxseed (breadcrumbs work too)
1/3 tsp ground cinnamon
A dash of nutmeg
A dash of ginger

200g puff pastry
1/2 tbsp unsweetened soy milk
1/2 tsp maple syrup

How to

1- Preheat oven to 200C.
2- Mix filling ingredients together. The dates will tend to clump together into a paste... make an effort to break them apart so as to distribute the sweetness evenly throughout the apple mixture.
3- Roll out puff pastry into a rectangle of approximately 21cm by 23 cm. Cut into 6 rectangles.
4- Place some filling on 3 of the pastry rectangles, top with another piece of pastry and seal the edges by pressing down with a fork. Cut 3 slits into each hand pie.
5- Mix soy milk and maple syrup. This will act as a substitute for egg wash! Brush the solution over the tops of the pastries and bake for 20 minutes or until crisp and golden.
