Epic Vegan Oreo Brownies (no butter, no oil)

How can anyone resist these heavenly squares of chocolate? Perfectly moist, not overly sweet and by subbing butter and oil with a bit of avocado, these are pretty much guilt free too! And you'll be happy to know, no animals need to be harmed in the process of satisfying those brownie cravings :-)
Don't feel irked about the addition of avocado, it's tasteless and is way healthier than butter / oil !
These are super yummy, my friends can vouch for that! Brought them to a picnic and they were gone within seconds hohoho. Topping them with chopped Oreos is of course optional but it does take these up a notch both in aesthetics and texture!
These brownies are honestly so easy to make without any fancy ingredients so if you're looking for something quick to impress some non vegans, this is your best bet.
By the way, using a weighing scale would be most accurate and ideal which is why I've included the measurements in grams.
Epic Vegan Oreo Brownies
Yields 8 servings
The Ingredients
100g all-purpose flour (3/4 cup)
22g unsweetened cocoa powder (1/4 cup)
3/4 tsp baking powder
140g granulated sugar (2/3 cup)
120g unsweetened soy milk
3/4 tsp vanilla extract
55g mashed avocado (1/4 cup, 1/2 avo)
40g chopped 80% dark chocolate (1/3 cup)
Chopped Oreos
How to
1- Preheat oven to 180C.
2- Mix dry ingredients together. Add in the wet ingredients and combine well. Then fold in the dark chocolate.
3- Pour into a lined/greased 8.5 inch by 4.5 inch baking pan* and top with chopped Oreos. Bake for around 25 minutes or until a toothpick comes out clean.
4- Slice and enjoy with your loved ones 💙
* I used a loaf pan, if you're using a typical 9 by 9 inch baking pan just double the ingredients and bake for 35 minutes!
