Hellu friends. I hope you are all well :) The long awaited Thai Green Curry recipe has arrived! It is vegan of course, but don't let that scare you, it tastes wonderful (if I do say so myself). I love Thai food ❤️❤️❤️ Although I adapted the recipe from BBC, I somehow ended up with 2 servings instead of 4. Perhaps it was my large appetite, or maybe BBC intended for the dish to be served along with something else.
In any case, I am extremely satisfied with how the curry turned out. It tastes like the bottled green curry paste we buy sometimes. Fresh is always preferred (for me), so hopefully we'll never have to buy bottled green curry paste again, and just use this recipe! This would go great with my thai fish cakes!!!
The ingredient list is lengthy but the process is easy. Give it a shot! You can make extra and freeze/refrigerate it too, just reheat when needed :-)
