Vegan Chili Cheese Fries!!

These taste legit.
Plus you can eat them all by yourself.
And no one has to get hurt.
(because vegan)
They only have an estimated 1 gram of fat. That's insane since regular chili cheese from, say Wendy's, would have about 30 grams of fat. That's more than half of what you should be eating. Personally that's the maximum amount of fat that I'd eat in a day.
Breaking down this pile of deliciousness, you'll find:
Crispy sweet potato wedges,
Spicy tomato mushroom chili,
Cheesy nacho sauce with a hidden vegetable,
and sprinkles of spring onion + hemp hearts!
It's a recipe for an amazingly satisfying and tastes-neither-healthy-nor-vegan meal. This would also make a good appetizer for sharing!
For the "chili" portion of this recipe, I used the passata tomato sauce by waitrose. It's great and very very low sodium :-))
As for the cheese sauce, if you're a vegan you may have guessed that it contains nutritional yeast. Nutritional yeast is a high source of plant-based B-12. I ordered nutritional yeast from iHerb.com once, quite a while back, and I... tossed it out after using less than half. At that time, I honestly quite disliked the taste and I had no use for it, PLUS it was taking up kitchen space............... I have no idea what was wrong with me though. Now I think it tastes similar to cheese, and who doesn't like the taste of cheese :))) The hidden vegetable I mentioned earlier is cauliflower! You can't taste it (well I can't at least), but it adds a fair bit of volume to the sauce!
Hope you guys try out the recipe (: I recommend eating it with a bowl of salad so you at least get some greens into your meal.
Vegan Chili Cheese Fries
Vegan, Low Fat, Dairy Free, Gluten Free
The Ingredients
Wedges:
Large 300g sweet potato
1/2 tsp smoked paprika
1/4 tsp black pepper
Chili:
1/3 cup tomato pasta sauce
1/4 cup-ish minced white button mushrooms
1/4 tsp chili flakes
Cheese sauce:
1/2 cup steamed or boiled cauliflower
1 rounded tbsp nutritional yeast
2 dashes of onion powder
1/8 tsp smoked paprika
Pinch of turmeric (for colour)
1/4 cup water
Optional toppings:
Spring onion
Hemp hearts
How to
Step one: Preheat oven to 200C. Cut the sweet potato into wedges. Put them in a container with 1/2 tsp smoked paprika and 1/4 tsp black pepper, shake the box around to evenly coat the wedges. You can also add oil if you want, but I don't. Then, bake for 20 minutes. If you poke the wedges and they're still a tad hard, you may want to bake them 5 to 10 minutes longer.
Step two: Heat up the pasta sauce and mix in the minced button mushrooms and chili flakes.
Step three: Chuck the cauliflower, nutritional yeast, onion power, smoked paprika, turmeric and water into a blender or food processor. Blend till the sauce is smooth.
Step four: Serve however you like! You can stack everything up like I did, or serve the cheese sauce separately in a bowl etc.
