Raw Red Velvet Cake Pops

Raw cake pops! Frankly, the texture of these aren't cake like at all but the look like cute little cake pops and they taste really good :) Plus they're naturally red from beets not bugs or chemicals. You can also make these without the sticks (I used cut straws btw) and instead call them energy balls? To me, these are best frozen,  but you can eat them immediately after you make them if you prefer. Oh and be sure not to have too many as the cashews make these energy dense and high in fat. 


Made these using dried mulberries (which taste ahmazinggg) but you can sub with any sort of dried fruit, just that the red beet colour might not come through much, especially if you use dates?





Raw red velvet cake pops
Yields: 5 cake pops

The Ingredients

1/2 cup dried mulberries
1/4 cup raw cashews
1/2 tsp cocoa powder (or it'll be brown rather than red)
2 tbsp chopped raw beet
Dehydrated coconut shreds/desiccated coconut

How to

Blend everything in a food processor (starting with the mulberries and then adding everything else) until its a clumpy but evenly blended mixture. Roll (rounded) tablespoon sized portions into balls, and then roll in coconut. Stick cut up straws, broken wooden chopsticks, or whatever you have in to them, or just leave them as they are, then freeze for a few hours before consumption. Consume immediately if you can't resist ;) 


P.S. If you use straws, a tip to poke em in easier is to cover the top of the straw with your thumb before you poke the other end  into the raw cake pop :)
