Thai Green Curry

Hellu friends. I hope you are all well :) The long awaited Thai Green Curry recipe has arrived! It is vegan of course, but don't let that scare you, it tastes wonderful (if I do say so myself). I love Thai food ❤️❤️❤️ Although I adapted the recipe from BBC, I somehow ended up with 2 servings instead of 4. Perhaps it was my large appetite, or maybe BBC intended for the dish to be served along with something else.
In any case, I am extremely satisfied with how the curry turned out. It tastes like the bottled green curry paste we buy sometimes. Fresh is always preferred (for me), so hopefully we'll never have to buy bottled green curry paste again, and just use this recipe! This would go great with my thai fish cakes!!!
The ingredient list is lengthy but the process is easy. Give it a shot! You can make extra and freeze/refrigerate it too, just reheat when needed :-)
Thai Green Curry
Vegan, gluten free, dairy free
Yields: 2-3 servings
The Ingredients
Paste
2 medium green chillies, de-seeded and roughly chopped (leave a few seeds in if you like it hot!)
1 shallot, chopped
1 inch piece of fresh ginger, peeled and chopped
1 garlic clove, crushed
1/8 cup packed fresh coriander with stalks
1 lemongrass stalk, chopped
Zest from 1 a small lime
Juice from 1/2 a small lime
4 kaffir lime leaves, torn into pieces
1/2 inch piece galangal, peeled and chopped
1/2 tsp ground cumin
1/4 tsp black pepper
1/2 tsp light soy sauce
1 tbsp olive oil
Curry
3 tbsp homemade green curry paste
200ml trim coconut milk
400ml almond milk
6 lime leaves, stalks removed, shredded
1 lemongrass stalk, outer leaves removed and inner stalk finely chopped
1 thumb size piece galangal, sliced
1 tbsp palm sugar (gula melaka) (coconut sugar works too)
1 - 1.5 cup chopped eggplant
1 cup chopped red bell pepper
1 cup chopped snow peas
1 cup chopped firm tofu
Thai basil to garnish
How to
Step one- Blend green curry paste together until the ingredients are evenly blended. Heat a large nonstick skillet over medium heat. Fry 3 tbsp of the green curry paste for 3-4 mins until fragrant.
Step two- Add the coconut milk, almond milk, lime leaves, lemongrass, galangal and palm sugar. Let the sauce bubble for about 10 mins. Add the tofu, egg plant, red bell pepper, green peas and cook for 15 mins more. If you like it thicker than boil longer but note that the curry thickens slightly after cooling.
Step three- Scatter on the Thai basil and serve with rice and my thai fish cakes as a side to complete the meal!
P.S the amount of vegetables you want to add into your curry is totally up to you. This amount may be too much for some who dislike vegetables?

ReplyDeleteI stumbled onto your instagram somehow and the first thing that excited me was how you're a plant-based blogger from Singapore--which is pretty cool because I haven't met that many plant-based lifestyle Singaporeans on Instagram. Anyway, I just wanted to say that your food is gorgeous and I think it is great that you're so aware of what you're putting into your body at this age. But at the same time--please pardon me if you find this rude or inappropriate, I only have good intentions!--I think that it is important for you to maintain some flexibility too. It is okay to treat yourself with 'unclean' foods and deviate from a strict HCLF ratio. The most important thing is to always listen to what your body wants, not just what you think is healthy (eg. cravings are usually a sign of some micronutrient deficiency). I say this because I noticed your age, and I think at this point having a 'perfect body' is wayyy less fun than spending time with friends and just letting loose. I'm not saying that healthy living isn't important, but emotional and social well-being is really invaluable too and focusing on your physical health shouldn't cause you to inadvertently neglect other areas of your life. Besides, every body is a perfect body for themselves. ;)
Also, as a teenager you may be susceptible to overly fixating on the technical aspects of healthy living and being more self-conscious. I made that mistake when I was your age--I started off by being more into healthy lifestyles and read up a lot on nutrition, and exercised a fair bit while obsessing over my thighs and stomach. Due to other circumstances, this eventually spiralled down into me eating less and less (because my list of 'clean foods' got stricter when I had no means to supply my diet adequately and I was too perfectionistic about what constituted clean eating), and before I knew it, I was left with a bunch of food issues. In retrospect, my body was perfectly fine and my sudden awareness of my slight curves after puberty, plus mental comparisons with my friends, made me think I was 'fat'. And then I tried to correct that through healthy methods that consumed me instead.
What my long, rambling story is trying to say: I've realised now that health is really about being holistic. It is not about following an 80/10/10 rule, or eating the perfect low-fat, sugar-free diet. (Fat is actually very essential to your brain and maintaining certain organs!) It's about feeling in harmony with yourself, so that whatever you eat and however you move, really flows with what your body needs. Ally (agirlnamedally), Anna (annabanana-1 on tumblr) and Siobhan (superfoodsiobhan/ iamnotover on tumblr) in particular are great examples, I think, of how we should maintain a carefree, non-restrictive attitude while following our ethical beliefs in veganism (:

Hi I completely agree with everything you've said. I'm currently trying to find more balance. I'm not completely strict with rawtill4. I actually eat raw in the morning but in the afternoon I deviate if I want. I also eat out with family and friends but I keep it vegan because I think although its not completely cruelty free or the perfect diet, it has the least impact. But if I eat some meat or dairy its fine since I hardly eat animal products. I'm trying to not let food run my life anymore, which is why I haven't been posting on instagram as much haha. I know I'll regret it in future if I waste my life now on obsessing over health and food. Thank you for your comment!
